Truth be told, I didn't find this very helpful to me in making an actual dough. Most doughs become thick and heavy, and I found myself using much more effort in mixing the dough than using the hand-kneading method. I finally gave up and mixed the dough by hand.
However, it does mix cake batters a lot better than a traditional wire whisk or a typical fork or spoon. It also works well when mixing liquids. I used it on a drink mix I need to review this week, and it mixed quite well.
As for how well a disabled person will use this, it all depends on the person's dexterity level in their hands/arms. I had difficulty using this; my adoptive grandmother, who has carpal-tunnel syndrome and arthritis, said it worked well for her.

This would be great for someone with an 'aging' disability but still has a good amount of arm strength, not for someone who has weak muscle tone in their arms.
